Best episode of Iron Chef America I ever saw was Michael Symon waving off his sous chefs after his challenger decided to tackle the job alone.

That, and the trout ice cream.

I have exactly as much enjoyment watching an episode of Chopped. I don't need the drama. Just want to watch them be inspired and cook something good.
It doesn't have to be the superb owl every god farkin episode.

Top Chef is the best.  You actually get to know the contestants a little bit instead if them basically being anonymous with just a few little personality traits sprinkled in.

And it has Padma.

Ah, if memory serves me right, the American version sucked ass. Thankfully Tubi/Pluto TV have all of the Japanese episodes in their original glory. Minus the original music score.

I don't think the fine line between great cooking competition and Japanese cheesiness will ever be able to be recreated.

Indeed.  It made no sense for the American version to have a "chairman" at all.  Japan seems to do the serious-yet-silly-yet-serious thing better than anyone.  It's why they're the only ones who can get Godzilla right.

I liked the original, but I had no idea wtf they were making most of the time.

The American version was ok for a while, but it just became the same thing every show.

That was part of the appeal.  A third of the time the secret ingredient was seafood or something no one outside of Japan had ever heard of.  There was real novelty.

The American version was ok for a while, but it just became the same thing every show.

So much of the attraction of the Japanese version was the way it was dubbed into English.  We mostly got serious play-by-play from a disembodied voice while the American version thought we'd want to hear the inane kitchen chatter from the celebrity chefs.  The chairman in the Japanese version was the only person whose voice wasn't dubbed.  Instead, we heard him speak in Japanese with English subtitles.  Why?  Who knows, but it added to the mystique surrounding him and to the show overall.  It was these little details that made the show so appealing.

I remember when the Food Network used to run these (the original Japanese version, not either of the American abominations).  My husband made me watch one and I could not believe what I was watching.  It was just utter craziness taken with such complete seriousness.  The first one I saw was the Christmas Turkey battle, where the challenger cooked a whole turkey inside a pig bladder and nobody batted an eye.  I was hooked.  The ONLY time I ever heard any of the commentators or judges show concern, no matter how wild the theme ingredient or how insane the cooking technique, was when Morimoto opened a can of Coke.  The judges were in a complete panic--until Morimoto took a swig and set it back down and you could see the relief visibly wash over everyone.

I loved that show.  Recently discovered it on PlutoTV and catch it when I can.

I remember in one episode, the challenger invited his old mentor, who was watching his side work when he suddenly punched one of the assistant cooks, saying (paraphrased) "He was doing it wrong" afterwards.

Japanese Iron Chef was always the best, hands down.

The episode I remember the most was this little old Japanese lady who had put out something like a dozen or so cookbooks and only cooked in her home kitchen. I think she challenged Sakai and had no sous chefs. She wandered around doing everything herself and wrapped up very early. She went over and asked Sakai if he needed her help.

She ended up absolutely slaughtering him.
