I use fine polenta as corn meal.  Why? Because they're the same f*cking thing.

Grits are made from hominy, which is corn treated with lye, then dried and ground coarsely.  They are not interchangeable with corn meal.

Polenta comes from dried, untreated corn, which can be ground coarse, medium or fine.

Corn meal is also made from dried untreated corn, and can also be coarse medium or fine, but fine is the most commonly available commercial product.  Coarser grinds are specialty items.

Polenta > grits generally, IMHO.  But good grits can be sublime.

I can't really tell you what the milling threshold is that separates polenta from grits, but I know it when I see it.

I didn't think there was a difference until I tried this stuff. It's expensive, but holy fark is it good. Then again, a little goes a long way, so it ain't that spendy.

they all seem harmless?

but THEN they get you to let your guard down, presenting themselves as just some inofensive sandy crap on the bottom of some breads, pizzas, english muffins.....still mostly harmless.

BUT THEN somebody prepares them by stirring in some liquid, then heating them! and they become Glue, Gritty Glue, or Gritty Bread?

bleh!

(ONLY likes cornmeal in soft masa preps like tamales or sweet spoonbreads. also acceptable and desired in corn tortillas and fried chips of the same. if it's glue-y, gritty, or BOTH it's garbage to me!)

there is ONLY ONE acceptable Gritty, and he is NOT for eating!

did some skrimp and grits a couple days back, being in californy i have to settle for quick grits, its all there is and i dont have time to fuss over grits all day.. some skrimps, some diced onion, a bit of olive oil, salt, pepper, a pinch of pizza pepper for some heat, a bit of garam masala,a little more oil and garam at the end of cooking. put it on a bowl of grits with a couple spoons of the oil in the pan. thats some good eating there.

I grill polenta, after cooling it in brick form. (Mini-meatloaf pans)

It works out well.

And this is why I like polenta okay but I do not like grits at all. Also, they're called grits, which is gross.
