No, they arrested you for trespassing. You were told to leave. It's their legal right to refuse service to you.  Your 'civil rights' were not violated. Olive Garden is not part of the government. How 'bout this, Sport? When you come in for your surgery, I'll volunteer to assist. I won't wear a mask or gloves or even bother to wash my hands. After all, I also have rights. Why should I have to choke on my own CO2 when we all know masks don't work? Before I hold your spleen for the surgeon, should I put a bandage on my cut finger? Do I have hepatitis? Am I vaccinated? None of your business! I don't know what's in those vaccines. I have rights. Blah, blah...
We need to bring back goon squads.

In my limited understanding, a private party cannot "violate" another's civil rights. Only the government (or a government agent) can.

I'd say that they are confusing rights with privileges.
You have the right to not be discriminated against; you have the privilege to go to a restaurant for a meal. Those privileges have always had limits (you have to pay for your meal, the business can refuse you if you're naked and/or rude to the staff etc) but for their entire lives these dumbfarks have enjoyed those privileges and are used to the limits imposed on them.
Now a new limit is being imposed (masks) and they're not used to being told 'no' - so they piss and moan and pull stupid shiat like this, because to them there is no difference between a right and a privilege.

Vaccine, mask, or not, we're all gonna get it sooner or later. Two people I am always in contact with, all of us double vaccinated, and one booster shot as our third. Guess what happened. Two of them got sick with coronavirus. I didn't. It's very weird how despite all of us being boostered, always wearing masks outside or at work, two of them still got sick and I'm the only one safe. They even made me get tested numerous times after they got sick but nope, it's really negative for me.

It makes me wonder if the vaccine or wearing masks has a point right now. It makes me wish I also caught the virus because now at least those two, have "natural immunity" or whatever it's called because they already survived the virus. What about me, I'll still have to get future shots? That sucks.

I worked in Times Square for 8 years, and I was unaware there is an Olive Garden nearby.

I know there is a Red Lobster, and a few of the guys in the office would go to happy hour there. It was one way to make sure you didn't run into anybody from the office that you didn't want to run into, and they would also troll for tourist girls (or in the case of the one gay dude, tourist boys).

Also fun fact for out of towners: the chicken wings at Carmines (mostly a tourist trap) are in the top three best wings in the city, if not #1. They are not cheap though. Also, get the Hot Italian sandwich (named after me I assume). It is very good.

I'm pretty sure this is the same group that also got themselves arrested at a Burger King and Applebees in NYC recently. Sbarro's is probably not mainstream enough for them. But if I worked at the Red Lobster in Times Square, I'd be beefing up security right now.

As much as NYC is home to more world class restaurants than you can visit in a lifetime, you can very easily have a mediocre/shiatty meal and pay top dollar for the privilege.  Olive Garden, Red Lobster, and others in the Darden triangle in Times Square fill that niche for tourists who want a known quantity when they're away from home.
