I love me some Popeyes chicken, but I don't think my gut could handle 12 straight days of it.

Honestly, I would absolutely love to get their spice chicken sandwich again, but my wife and I completely swore off trans fats (and have been pretty careful about saturated fats) since she has a heart attack last year.

My idea of a chicken sandwich involves meat scraped from the bones of a Costco rotisserie chicken mixed with mayo, celery and dill pickles.  Made some for lunch today.  For fried chicken, Winco is Number 1. They also do a good job baking it.

I would qualify your version as a chicken salad sandwich, which is definitely delicious. Chicken sandwich is whole chicken breast, fried, grilled, whatever

I can feed me and the dog for two days plus a bonus soup from a Costco chicken. I stretch it out by not just eating chicken for two days straight but it definitely ends with chicken bits and cheese in a flour tortilla.

My ex and I used to get Popeye's exclusively at the rest area about halfway up to her grandfather's place in Maine, so about the same frequency as you. The last hour of the drive was almost always digestive misery for one of us. Always worth it, though.

I've discovered lately that the KFC spicy chicken sandwich is at least as good as the Popeyes one and tends to take about a quarter the time in the drive-through. Such knowledge comes in handy every few months, and is less likely to end in suffering now that I understand my microbiome's relationship with grease.

We had a Popeye's open here a few years ago.  Weeners was crazy...long lines of cars all the time.  However, as people realized how bad the service was, the place rarely has more than one car waiting at the drive-through these days.
