Had it while passing though Incheon, and again at a hotel in Cebu. Honestly, the pork adobo and rice topped with the egg was far superior to the seasoned rice. But I'm a sucker for adobo... :-)

Super easy to prepare, highly recommend trying it.

Interesting technique, definitely a nice modification to the western style omelet. I shall try it sometime this week when I can't figure out what I want for dinner and have breakfast instead.

I'm a sucker for French omelets, so I tried giving this a go. It is super easy, you just have to remember you need a LOT of oil or butter. Clarified butter works best.

Needs some fresh chives (just the greens) and finely ground pepper, but otherwise perfect.

American omelettes put a lot of ingredients straight into the eggs.  Other omelettes might have very little, or fold something into the cooked egg.  This version appears to put seasoned rice inside and ketchup or some o ther sauce.

OMG!   My daughter made that YESTERDAY for her Breakfast!!!  (Home from college)...   I just looked at it, raised an eyebrow, and walked away!  I had NO idea it was a ... thing!

The last time I added tomatoes (OK, tomato sauce) to an omelette[0], the acid in the tomatoes ate through the eggs and the omelette became ... sloppy.  Still tasted good, just was not highly photogenic and sort of needed a spoon.

[0] Many leftovers that needed to be used were there.  It was late.  Beer was involved.  Mistakes may have been made.

How is this an omelet? Omelets generally incorporate something else... meat, veggies, dairy, etc.
This "omelette" is nothing than a presentation of scrambled eggs, and I prefer mine to be cooked properly.
No thanks, waist of thyme.

It is the undisputed emperor of omelettes.

It's so f*cking good, I bought a special skillet just to make it properly. Anytime I don't have enough eggs for Benny and hollandaise, I make Tamagoyaki. The multitude of wraps traps the moisture and flavor inside. It may look dry when sliced, but the moment you start to chew, its like a mouthful of broth.

I can't say that I have, unless... making the egg fold for nigiri sushi counts, because that I have made it and it was good.
That said, I wouldn't consider that an omelet. An omelet is more than just cooked eggs in my book.
That second picture though, that looks like like a rolled/folded omelet to me.

Do you have a recipe for me to try then? I'll give it my best shot and give honest feedback...
