I can't remember if it was posted as a thread or in a thread but I saw a recipe for brie with brown sugar, Kahlua and pecans on top, baked.  Supposed to dip apples in it.

Made it for Thanksgiving at the parents.  Hot damn was it delicious.

CLARE.  That is at the very minimum $30 worth of cheese.  Then what? Five or six bucks for puff pastry.  And TAX.

That's a forty dollar pile of goo, CLARE.  More if you buy the good stuff.

but a half-batch? topped with apricot jam and silvers of prosciutto under the pastry? HELL YA! maybe a bit of fresh rosemary and unsalted pecan pieces on some, raspberry jam on some, and the aforementioned apricot/prosciutto on the rest? shiiiiiiiat, i just talked myself into making the BIG pan. goddammit, claire.


and last but not least, claire retains her CLAIRE-ness through and through:

p.s. i was not pleased with my cranberry-lime-ginger pie. my filling tasted AMAZING, but failed to fully set, and my speculoos-pecan-crumb crust was too hard. BUT the filling was SO good we scooped it out and put it on top of vanilla ice cream and ate every drop of it, tossed the crust 😊. if i make it again i will add a little cornstarch to the filling and just pour it into a store bought graham crust.

the above brie technique appears foolproof however.

I could chug a pot of fondue or a bowl of queso. Brie is the nasty, salty flem that drips down your throat when you have a bad cold. Anyone consuming it should be vaccinated and quarantined.

A psa on my experience as a fairly old dude, you don't want to change your diet and suddenly start eating a lot of tasty cheese, not if you don't want to endure the experience of kidney stone symptoms.

By the way I'm still looking for some koji rice so I can ferment it to use it on a slab of ribeye for New Years.

Not really, but I do keep a bag if white shio miso in the fridge and make my own fermented nonsense so sounds great, though I think I'll get the already fermented version on this.

Also, gives me an excuse to grab some Japanese KittKats and while at the shopping center some ChoongMan chicken. That place is unreal.

We do baked brie for family gatherings. Just a single round, not a whole baking dish full. Serve with cran raspberry preserves, its delicious and never any left over. Seems to me claire's making it for a main dish...

A long, long time ago[0] one of the appetizers at a party was a brie wheel with a thin layer of raspberry jam under it and crackers.  I thought it was actually too sweet and went for just the cheese.  However, that's reminded me of the years-ago Christmas feast where Steve and Joy brought 3 kinds of cheese and 5 kinds of crackers.  And I want that now but it's too expensive to just go and buy a bunch of fancy cheese.

okay, real talk: my extended family parties always have a minimum of 20 people at them, but i would only make this with 2 brie wheels, max. on actual thanksgiving my cousin did 2 wheels as brie en croute on the appetizer table, one with bourbon drizzled pecans and one with raspberry jam, both got eaten. so that's enough brie for most non-CLAIRE hoomans.

you can get some really fun cheeses at aldi, trader joe's, costco, and most regular large groceries. no reason to go the whole foods/mariano's/boutique-urban-cheese-​cave-route and buy stuff that costs $20+ per pound unless you are dining with genuine cheese snobs.

if you are doing brie with "toppings" don't bother with a fancy one, something like Président brand or whatever is at costco will work just fine.

if you are at trader joe's, just plain room-temp brie is excellent with some fresh french bread and crackers like these:

Looks like the cheese boards my niece always brings to any family thing. Then again, she is marketing manager for the Dairy Farmers of Wisconsin so she is always getting  new artisan cheeses to try.  I have been introduced to some really excellent ones but my favorite is Rush Creek Reserve from Uplands Cheese.

ahhhh, i saw bowie in 2004 at the rosemont theatre. and it was a "life list" event. he did "under pressure" with Gail Ann Dorsey on base and vocal.

this wasn't my show, but it was like this:

It's OK. I never got to catch him live..

I also don't think that bar on 8th street exists anymore either.

I'm normally more a metal/ punk fan.

But everyone does themselves a disservice not hitting Austin at some point for the sheer insanity that Is sxsw or any other music festival. I've drank a beer and traversed bluegrass, doom metal, Hypnotic and skaa in one go at a venue.

It's the only time I can say I heard awesome banjo bands and some great death metal all in a night.

That pic was the beginning of 3 years. And I could walk into a bar and listen to piano, another is playing jazz, another has viking metal blasting.

It's worth the visit. And living there kinda sucked. Especially when your now ex was taking ketamine and burning random shiat or you almost got half your face clawed off..

i'm from the western chicago burbs. i've lived there and in the city proper, iowa city, cusco and iquitos peru, carbondale IL, florida, and backpacked the idaho/montana divide, sea kayaked the kenai fjords, and kayaked all around isle royale, and hiked the superior national forest.

but with me and the ex and the ketamine i was mostly taking it. thankfully he refrained from burning anything that couldn't fit in a pipe at that time.

i am curious to learn about your hike across the country.

-what brought you to utah? i've never been there either.

weirdly, i've also never been to colorado. i have friends outside denver, and my entire immediate family has been there multiple times, but not me (even when my sis and i were young enough to do vacays with the parents, but i was always somewhere else). i was in a bunch of places in montana, and in wyoming -seen both yellowstone and the tetons twice- but no colorado yet, no utah.

and nowhere in texas. nowhere in the entire southwest either.
