1939 Smothered Chicken Recipe - Old Cookbook Show - Glen And Friends Cooking
This is a one pan chicken and gravy recipe that may not be very pretty, but is really easy and delicious.

At least they had the good taste to leave out the "choking the chicken" part in the video.

A lot of the old recipes are all about saving fuel. If it was summertime, heating up the house was out of the question, richer people had a separate 'out building' for cooking. A "Summer Kitchen" in America.
Except for the Irish and British who had attached Kitchens and stoves that where 'always on' even with gas....because it's pretty year 'round damp and dismal in those places.

Sometimes simple is better. This outcome of this recipe looked good.

Last night we made a spatchocked chicken with only butter and salt and pepper on a sheet pan. and it was very tasty.

I would have liked it more if there was enough gravy made that you could put it over mashed potatoes. I bet it did taste good.

There was plenty of fond in that pan to make 3X the amount they made. Keep more of the fat, add more flour, add more liquid. Boom...more gravy.
