Mushroom jerky isn't too bad. Just go easy on the soy sauce.

King Trumpet mushroom has been a meat substitute for years. Really good when you cook them in bacon grease but then again I guess that defeats the purpose.
Hard to find in the store but I sell out of grow kits as fast as I can make them... I own a mushroom farm.
No you can't has any - local only.

Those Trumpet mushrooms are pretty tasty, I've only had them a few times though.

While foraging for Morels this past year, I cane across some Chicken of the Woods mushrooms. First time I'd ever had them -- very tasty. Used them as a chicken substitute in a carbonara I made, just for the heck of it. Really, really yummy.

Fake bacon already exists.

Am I the only person on this planet who doesn't love the flavor of bacon?

Put it on a cheeseburger, good. That's where it belongs. Put it anywhere else and the the flavor of bacon drowns out whatever it was you were trying to accomplish.

Back in the early 70s we used to eat a bacon substitute made out of chicken. I bought some 30 years later & served it to my kids. My then 6 y/o daughter threatened to stab me in the dick with her Sponge-Bob fork if I tried that again.

She was - but chicken bacon turned her to the dark side!

been maybe a decade since MayWah stopped selling one particular brand, but I'll never forget it - the "meat" part was your usual soy+wheat, but the "fat" part was some mushroom formulation. that stuff was so beyond-uncannily-good, to the point I always felt weird about eating it lol.

unlike the disgusting frozen 'murican types, which are all extruded from the same sludge - just some stripes are dyed red and some not.

still have all the ingredients for this one, but I am a very lazy man... one of these days...

Get the texture and the flavor right, and I'm in..but not until then.

"We're focused on all the important characteristics that make bacon, bacon. The crispiness, the fattiness and just the right amount of smokiness to meatiness. If bacon is the product that meat-eaters refuse to give up, our Libre Bacon is here to change that," said Ramos.

They have the right approach, and I'll be willing to give it a try when they get a bit closer... but that said, I happen to have a pork belly in my fridge right now that is just waiting for me to bacon it. I should probably get started on the brine today...

I've heard it can be made from pork bellies.

I don't understand how their fungus fermentation is different from Quorn? Quorn has rashers. They're okay. My husband likes them well enough (he's vegetarian).

Looks like bacon that was cooked for way too long, which is just as disgusting as fake bacon.

It sounds like they already have it down but the EU is the hold up. I've mentioned in a handful of posts that I thought that mycelium was the future of meat. The intricate random weave of growing fibers is something they will never pull off with a printer. I don't understand their problem. Mycelium is no different from a fruiting mushroom body. I once read an article on making psilocybin in a carboy filled with a nutrient solution and areated with a fish pump. It sounds like people were already impressed with the flavor of their product. The mycelium would just make for the texture.

You're not alone.

Don't get me wrong, I guess you could say I like bacon, but just barely. Give me a bag of jerky over a plate of bacon any day.

That is intriguing. I could see making chips to serve with dip, as a snack. I will stick to the real thing, meat-wise though.
