Fried egg sandwich is over hard - ie no runny yolk.  Cold.  On lightly toasted bread (like you'd use for a club sandwich), with mustard.

This brings up an interesting dichotomy that has some weight towards Clair's trailer trash side of the tracks.
I've had wonderful home cooked eggs, truck stop eggs, greasy spoon eggs, but as much as we all admit to a penchant toward a great char-grilled steak, Maillard reaction, or caramelization on an egg seems like a blemish in fine dining. A folded omelet should be devoid of brown spots or returned to the kitchen. Even over easy should be done at a low enough temperature to avoid delicious crispy brown spots or served with it on the bottom so as not to be seen. Chefs correct me if I'm wrong. Either way, I'll side with Claire's trailer trash take on this one, but I really don't care which side is up. Cutting it with a fork gets it blended either way.

I won't eat a fried egg if it has crispy brown bits. It tastes like caramelized plastic.

Yeah, I'm gonna disagree.  Just a very fine browning on the outside of the omelet, barely noticeable.

crispy, fat-soaked, "lacey edged" eggs are gross! SUPER gross!

i cook mine with a pan-poach method:

heat nonstick pan on medium high.
crack one or 2 eggs into a little bowl.
spray hot pan very lightly with your preferred fat, or chuck in a SMALL piece of butter or bacon fat.
tip in the eggs, sprinkle with salt or spice as desired.
tip in a small amount of tap water, like half a shot glass or so.
immediately cover with a glass lid.

in a minute or 2 the steam will make the white fully cooked and the yolk just barely filmed over.
plop the egg onto your plate, sandwich, ramen, rice bowl, green salad, whatever and enjoy.

egg yolks should be well-warmed-but-liquidy and the whites should be fully-firm-but-tender.

dry, crusty, crispy, greasy, browned egg whites are disgusting and should be cut off and thrown out!

Right or wrong, I just threw together a masala omelet for a late lunch/early supper, and DAMN, it was just what I needed.

where did you learn that? to what region is this travesty native?

"everyone knows" that if for some reason you desire COLD egg sandwiches you just slice up some peeled hard boiled eggs. and mustard is fine, but at least one piece of your toast should have good mayo on it (you know, like you'd use for a club sandwich).

a WARM egg sandwich (or breakfast burrito) should always involve tender and fluffy scrambled eggs, or an easy-over fried egg with a warm oozy yolk, to act as an additional sauce, and a slice of cheese.

If only there was some way you could order them like this... perhaps by saying "over easy" vs "sunny side up."

Or something.

I'm just throwing that out there.

I don't particularly care for crispy edges on eggs but I was brought up in the school of EAT WHAT'S ON YOUR PLATE and IF YOU DON'T LIKE IT THEN YOU CAN DO ALL THE COOKING and who needs an argument over breakfast? Not I.
It's easy to mess up eggs or an omelette and there are entire chapters about eggs in good cookbooks.
I believe the concept of  'easy over'

Here's how you prepare a mess of eggs.  First, fry a pound of bacon.  Heat the bacon grease until it is smoking hot, crack in your eggs, spatula the smoking hot grease over the top of the eggs, cooking both sides at once.  Slide the crusty crispy greasy browned eggs onto your plate and chow down with a side of bacon sandwich.

just a while earlier I was inflicting upon the ramen thread, this ~hotpot-style delivery dish. I ain't usually like over-medium, but damson if that crispetty egg weren't delicioso.

A long, long time ago[0], there was a Korean place pretty close to my apartment that had bibimbap in hot stone bowls for very reasonable prices.  I ate that at least 2 or 3 times with zero bad digestive effects.  I just can't see what would be in that dish that would cause any problems at all for most people.  Then again, I can eat the Spicy Pork Enchiladas of Spooky Doom and be like, "Meh," where some people would eat the same thing and be like, "Mephistopheles is playing 'Flight of the Bumblebee' using my butt as a trumpet and this cannot continue!!1!"

I prefer my eggs hatched, raised to a tender age, then killed & dipped in a bath of their liquified children and fried to a crispy golden, with some seasonings mixed in.

A bibimbap in a super hot stone bowl is technically a dolsot bibimbap.

The nearest Korean place to me does not have the super hot stone bowls and it is a place of sadness.

When i was in Detroit for work a while back, a coworker and I would go to the Korean restaurant inside an Hmart for lunch. I would always get the dolsot bibimbap while my friend would get a soup in one of those stone bowls. I shiat you not, his soup boiled for 5 minutes at the table after it was served. We called anything served in the stone bowls, magma bowls, because they never cooled down.

And how does this all relate to the fried eggs? That runny egg mixed in with the rice that then gets all crsipity cooked even more when it touches the super hot stone bowl is freaking awesome. If you you have never had it, go find a Korean restaurant that features the dolsot bibimbap and witness its glory.

I read an interesting tip for eggs on Twitter the other day. Apparently, if you like your yolk to be centred on the white when frying, gently shake the egg for a bit before cracking into the pan. Obvs if you do it too vigorously or for too long you risk scrambling the egg in the shell.

I haven't tried it yet, because I'm not much of an egg man, but when I do go for eggies I like a centred yolk.

/And, for preference, no burnt bits and a very runny yolk.

I don't think the restaurant I went to called the dish "dolsot bibimbap" on the English menu.  However, the bowls were hot enough that you could sense the heat from over 3cm away via convection when the waiter brought the completed dish to your table.  I don't know exactly how they were heating those bowls, but they were not farking around, and it did not take long for the raw egg to cook if you stirred it up with the rice and beef and vegetables.

Curiously enough, google maps returns very little in terms of Korean restaurants in my ZIP code.  It's been years since I've had good Korean food, and this doesn't help.  argh.
