Hmm, let's make a creamy peanut butter from peanuts and salt. Let settle to release peanut oil that we drain off and replace with cocoa butter.

Make patè au choux for eclair pastries.

Create a berry compote, reduced to thicken, and blend with a cream filling.

In a double boiler, melt peanut butter and cocoa butter amalgam. Hunt for a temperature that sets well on the back of a spoon.

Fill the eclair with berry cream. Back dip eclair with setting peanut butter sauce.
