I'll put a couple chunks of barely-thawed cod in my risotto with about 10 minutes to go.  They poach up nicely in the hot stock.

Peas and mushrooms are just classic risotto ingredients.

Sh*t. Next time I can get a deal on sea scallops, I am totally making scallop dashi risotto. Probably with peas too. Pease are pretty great in risotto

I grew up spending the summers roaming the San Juan Islands, Washington state. We stayed on Orcas but did long trips to many of the uninhabited islands all the time. Lots of fun growing up doing crazy shiat before the world got busy.

Some of this was stomping on mussels and whipping bull kelp at each other at the tides edge. The mussels, clams, oysters, and everything was so abundant we didn't even think about it. Now I pay $20 for a dozen in a light sauce.

Sounds interesting, I'm going to try this. I can't get burrata cheese here; would mascarpone be a reasonable substitute?
Can't get clam juice here, but that's not hard to recreate with steam Asari clams.
