ladle is really convenient aktually, quick cleanup, stir with steel Korean chopstick for best results.

From my experience with oatmeal lace cookies (which are mostly caramelize sugar) my trick to getting them out of the pan is to let it cool for a couple of minutes to firm up, then put it back into the oven for a minute so it'll soften just enough to flex and not break.

And never think 'this doesn't make a whole lot... maybe I should triple the recipe' unless you have really want to stand in your kitchen swapping pans in and out of the oven for a few hours.
