I should try it one day, I grew up eating yellow rice (sorta rican) so I have a kind of weird comfort food psychological thing that rice always tastes better when it's dyed yellow ::shrug::

very engaging read, thank you Subs!

and huh, I'd never once in my life thought of biryani as a "street food" so that's definitely intriguing. and the bit about scooping marrow from ginormous cow bones.

Was planning on picking up Chicken Biryani from the local "Pak-Indian" place for dinner tonight so I'm getting a kick.

In Toronto there's about every style of biryani one could want. Within a 10-minute drive from my home there's a Hyderabadi place and a Sri Lankan place, for example. Tried Squid Biryani at the latter place last year and it was, by far, the spiciest meal I've ever eaten. Best chicken biryani I've had was from Biryani Boss - a 5-minute drive away - but they've been closed since last January after an electrical fire and COVID-related reconstruction issues. Damn, now I'm hungry.
