Pretty high, because this year COVID has fluctuated from being the 1st to about the 3rd leading cause of death in America. During big surges it seems COVID can be the leading cause of mortality; in July it dropped back down as a cause briefly.

Be careful.  I recently learned from a southern coworker never to confuse bbq with grilling.

Eastern NC BBQ sauce (vinegar/pepper based) is a particular targeted sauce that works well with pork.  It is not nearly as useful at other regions sauces on other meat types so its utility is limited.   God help you if you try it on beef, chicken, turkey, etc., but for pork cooked low and slow and falling off the bone, it does something magical to the meat IMO.

Regional food is something the cherish.  It may not always be exactly to your palette but I always like options.  Except for those mustard based heathens who can burn in hell....

The mustard sauces are more common in South Carolina. Sauces in North Carolina are essentially vinegar and ketchup (I am actually not joking, that's 99% of what they are). Just, no.
Anyway, what NC "BBQ" is known for is cooking the whole hog in the pit. The whole farking thing goes in, it is seasoned mostly with vinegar, cooked through, deboned, and either pulled or chopped-up. So you could have anything from ribmeat to anus or nose on your plate. It is the farking hot dog of BBQ. The vinegar and slow heating turns it all into the same consistency and vague flavor. It is by far the cheapest way to put meat on plate.

Here's the problem. A restaurant should have a variety of meats to offer the customer - that means pork, beef, poultry, seafood, and specialty items like sausage. North Carolina is heavily focused on hog - even more so than Texas BBQ is focused on beef. Also, different cuts of meat have different characteristics, flavors, and fat contents. That means that they are prepared and cooked differently. Different temperatures, different amounts of time, and different treatments while cooking. Going whole hog makes everything super-simple, and uniformly bland.
