Amazingly enough, Pigs, Chickens, and in a pinch cows, ALL can convert tofu to meat.

I keep my own chili oil on hand, so I usually take this route instead. Similar, pretty damned tasty result.

if I'm not being too lazy (Narrator: pfft yeah, so when exactly is that?) the extra step of freezing after pressing also helps with texture. altho' all of this is antiquated knowledge - so maybe Claire will report on it sometime next year?

/or sometimes I just freeze it directly when CBA to press, eh also works ok

Bingo. I figured out the freezing and squeezing thing in the early 90s
Selling wraps to college kids.
Many of whom were sus that the meal was not entirely vegan.
it was too good.
Made my boss a lot of money.

It's like any other protein main.  Good with other proteins, good on its own.

Tofu gets a bad rap from the lazy farkers that don't cook it properly.

Tofu gets slammed because people don't know better.  I'd never substitute meat for it and pretend it's meat.  That's the abomination.  But used as its supposed to be, it's fine.

Yeah, most of my vegan friends use a simplified version of a tofu press. Although I think they've only gotten a cheapo and use a weight instead of a spring.

I have to try that again. Flavor was really good when I had it, but I don't know if I like my tofu that soft.

For forty five bucks I could make you two very nice Dutch-style cheese presses that you could also use for tofu.

seriously, mapodoufu just isn't as good without the pork. (isn't everything?)

Ant: I have to try that again. Flavor was really good when I had it, but I don't know if I like my tofu that soft.


a lot of places serving stuff like poke bowls or pad thai, will offer julienned tofu "skin" that's got a decent chewy texture.

or a lazy favorite is those frozen fried cubes, man are those ever good!

Tofu does get a bad rap, but it's texture makes it kind of deserving. For that reason I usually use tempeh because it has a good bite and fries better.
