What you need are Louisiana style cracklins. You don't want to dip them in flour/batter since it would burn. If you are traveling I-10, there are some great places just outside Lafayette that will do you right.

That reminds me of a story --

A friend of mine visited her brother's family in Indiana or Ohio (can't remember if it was before they moved), and they went to a restaurant that has a salad bar.

She said that there was hardly anything on it that she'd have classified as a "salad".

Her brother explained that there was macaroni salad, potato salad, jello salad, chicken salad, etc.

...

So, putting something like that on top of fried bread?  Brilliant.

And they put cranberries in it, so people can pretend it's healthy.

Iowa has quite a few emu and ostrich farms.  I have a friend that did an interview with an emu farmer for her college's alumni magazine. While she was there an emu got its head stuck in the fence.  All it had to do was rotate its head a little bit and it would have gotten free.  Instead it pulled so hard it pulled its own head off and then ran around like the proverbial chicken.  All the farmer said was "looks like I'm harvesting that one early."

I wouldn't eat anything with eggs or mayo in it at the Iowa State Fair.  Nothing like dairy products that have sat in the hot sun all day.

All of those salads that you suggest are mainstays at every gathering based on my lifetime in indiana, and most of it i find very gross.  Who wants to eat cold, mushy pasta out of plastic containers?

Unless lolo bobo is the food vendor, operating without a permit, you're fine.

Iowa takes fair foods and Ag promotions seriously, the "chicken egg council" or whatever this is has plenty of onsite fridges.

Also, the pH level of commercially made mayonnaise actually inhibits bacterial growth.

So if you want cranberry pecan egg salad on fried flatbread as an appetizer to the deep fried butter stall have at it!

Correct.  I guess I should've spelled that out, but most people I know would assume 'green salad' if you didn't qualify it.  I guess that's not as common as I assumed

I forget what she said they had that she expected to be there (or was missing)

I know her standard for a green salad is lettuce (not spinach), tomatoes, cucumber and green bell peppers.  Preferably also including carrots, and optionally croutons.

Cooked sweet corn on the cob with butter and salt is pretty much 100% awesome.  Putting it on a stick is... sort of a win/innovation?  I won't disagree.  I had to peruse the contents of the State Fair Android App for a midwestern state (Ohio?) a while back; they had deep-fried Twinkies as one of the available options.  Eep.

I had one of those at the MN state fair a good number of years ago. Highly overrated. It was so sickly sweet it made a Cadbury Egg seem savory.

That pic is making me crave Mexican Street Corn (Elote). Smoking a port shoulder today --- might need to grab some sweet corn from the freezer and grill some up as a side.

Have to confess that I spent the day at the fair last Tuesday, saw the Beach Boys and a lot of people with strange tattoos but didn't eat a single thing there; did have a few beers before the concert.  For me it's almost entirely a people watching experience.

Seriously, grab from the freezer?  The stand at HiVee Drug at Centerpoint has fresh, really good stuff.  Save the freezer for the winter man.
