I can deal with those just fine, but only certain kinds.  Betty Crocker are good.  Idahoan are terrible.

I still prefer fresh though.

Can't go wrong with au gratin. Garlic horseradish mash. Roasted Fingerlings with herbs. I have some kielbasa in the fridge, might make that with some sauteed red potatoes, onions and peppers tonight.

I can add other stuff if I want "mashed potatoes" I use them as a thickener sometimes. A coating sometimes. Even a filler. They're kinda versitile. Not fine dining, but useful in this guy's kitchen.

Since Ms. Gough avoids gluten whenever possible I use instant mashed potatoes instead of flour to thicken soups.

Put a bunch of russets in a stew pot and boil them for an hour and a half with the skin on. Pre-heat the oven to 400 while you're doing that. Cut off the tops of two heads of garlic and drizzle them with extra virgin olive oil. Wrap those in foil with a little venting on top. Periodically check on the potatoes by poking them with a kebab skewer until there's little resistance. Drain the pot. Add heavy cream. By this time, the roasted garlic should be ready and will squeeze out of the skin. Mash  and stir for a few minutes. I like my mashed potatoes a bit lumpy. Serve with a giant porterhouse steak.

It's a pretty smart choice, they manage to add a fair amount of calories without making the flavor much better than what you can do with a bit of salt, herbs and spices yourself. To boot the big ol box of just flakes (meant for food service) from Idahoan is a much better deal anyways.

half a year ago I snagged this ginormous abomination for 9 bucks from the hamazons. mainly because it amused me, but also the price seemed right. ingredients: duh, salt, dextrose, sodium metabisulfite. still have yet to try them (sheer enormity of the thing scares me a little, lol) but trust me it'll get used up eventually.

suppose I could even run some thru' the blitzer for flakes/powder/etc.

I guess I should contribute something besides snark. This dish is amazing; make it if you haven't already. And do yourself a favor a fry a couple eggs to go on top.

My wife has been on a sweet potato kick for a while: fries, tots, baked. Don't know if that counts.

Yep. As I said, large stew pot with lots of potatoes. When mashed and seasoned, it's one of the few dishes that reheats nicely. If you want to make a pork chop or lamb lollipops, it's easy to scoop out a helping of mashed taters and even dress it up with some melted cheese or gravy made from the drippings.
