Related sorta, but different guy: VERY well done documentaries on the making of each of the original Star Wars movies, Raiders of the Lost Ark, and Jaws. They're all excellent and quite long/detailed.

Awww, that's a tough one. Dude was part of the inner circle at Lucasfilm. Loved his interview with the Rebel Force Radio guys almost a year ago.
