I was more drawn to that story about the Chef disabled in the Amtrak accident and who shock all that off and came back to keep running his four restaurants.

I've never known anything to substitute Philadelphia cream cheese WITH other than generic store brand cream cheeses.  In retrospect mascarpone and ricotta make perfect sense.

Yeah, title makes no sense. Anyone from Philly knows the only thing about cream cheese and philadelphia the place have it common is it's name.

It has nothing to do with the actual place.

I remember a commercial for Philadephia Cream Cheese that used Sinatra's "Start Spreading the News".  My brothers and I were confused about why they'd play a song about New York for Philadelphia Cream Cheese (this is when we were like 8 and 10).  Much later I learned why.

Philadelphia Cream Cheese, now that I think of it, is actually very consistent and I've got to give them that.  (The bricks are, anyway.  The kind that comes in containers is less dense and more spreadable, but I guess that's just a different consistent and I prefer it for bagels.)

Anyway, if you want my opinion, it's a little overrated for cheesecake.  That's probably one thing that you don't really need it's texture or flavor profile for, since you're adding like a third of the cheese's weight in sugar to it.  It's a good baseline but I think you could do better mixing in a soft cheese with a flavor other than tang (like brie), or something a tad less dense.

Philadelphia Cream Cheese is one of those things where I prefer the genuine article. I bought the Whole Foods brand to qualify for free shipping. It wasn't bad, but it's not the same.

It's the same with Q-Tips vs other brands of swabs.

We were eating fried wontons from the Thai restaurant, the ones that for some reason had cream cheese in them, when I told everybody that Philadelphia Cream Cheese was the number one selling cream cheese in southeast Asia.

my home made from scratch quark/tvorog is infinitely better, but the monotremes ain't appreciate it so you betta you bet I'ma just buy neufchatel on discount instead.
