On the one hand you have real food snobs who disdain things like "cheese like food product" made from water, vegetable oil,starch, whey, emulsifiers. Then you have vegans who appear to believe that the more artificial is the better.

and if' you were to throw in some chilis and a bit o' honey, well, ain't nobody complaining 'round-hyeah.

I do like a Korean goguma (sweet potato latte. I suppose potato milk would have potential.

I bought some Silk soy milk recently (the Mrs and I are both lactose intolerant), and it seems... fine? Tastes much better than the soy milk I remember from my childhood, and mostly like the real thing. Not sure what all the other vegan milk substitutes offer that soy milk doesn't.

We tried this once. We called it coffka. It was ... extremely not good.

Andrew Weil talked about appropriate diet and how we should aim for low fat but how mouth feel is important for satiety. [Insert mouth feel phrasing comment here] It seems like potato starch could serve this purpose well. If nothing else, this seems like a cheap shortcut to white Russians.
