Because Pee-Wee Herman is fictional. Likewise, Luke Skywalker does not voice the Joker.

Because, Subby, Paul Reubens is the voice of the pilot droid on Star Tours. Pee-Wee Herman is a character he created and played.

Darth Vader isn't playing Mufasa the lion, either.

That version of the ride has been replaced, yes. Now C-3PO is the pilot (because apparently casual fans can't go on a ride without one of the main cast present at all times) and R-3X has been repurposed into DJ Rex in the Cantina on Batuu.

I don't know if Reubens did the voice for the revamp or not.

It was pretty obvious in the character's nervous laughs, but otherwise maybe not so much.  Reubens has a distinctive laugh(of which Pee Wee is a huge exaggeration of it)

R2 was the astromech droid on the original ride. You also saw R2 and 3PO doing maintenance on the Starspeeder while in the queue. So, there's always been a  'original cast member at all times' on the ride.

The new version of the ride is more like an expanded version of the original plan. Two random hyperspace jumps, taking you through 2 planets from random eras. The Naboo sequence is great because you get to run over a Gungan. Also, you get a random character delivering the holomessage between the planets; Yoda, Poe, BB-8...

Rise of the Resistance at Galaxy's Edge is the real deal, though. Disney just needs to figure out a better reservation system for it.

They brought that back in 1983.  Both it and Peter Pan's Flight really needed to have some kid testers on those...I recall both were too dark to see much after being outside, and if you're small, then you don't get to see much anyway because the ride vehicle you're sitting in blocks the view.  Peter Pan suffered from this way more since damn near everything is below you.  And once I was big enough to see over I didn't want to ride it because what I remember of it is that it's hard to see, it's disorienting, and it smells weird, and that combination made me sick to my stomach.  So I honestly have no idea what those rides are supposed to be like.

I ended up going to Disneyland way more than I ever should have been able to mostly because I had an uncle working at JPL who kept taking us.  And dad won a radio station contest once.

Anaheim.  Apparently it's been replaced by a sequel but what I was looking at wasn't clear.
