That's obviously a terrible answer for applying a 'kill step' to fresh greens.   They will get wilty and brown!

You need to 'low and slow' the kill step.   Aim for ~135F for at least an hour.

That reminds me of an actual chef salad that I got from a local burger joint. There was probably at least two pounds of meat on this thing. You can barely see the layer of cheese that was under the meat. Or the layer of veggies that was under that. The lettuce was the ingredient with the least volume in this thing.

Healthy? Absolutely not. But it was tasty, and made several meals.
