Well they do that nasty fermented shark stuff in Iceland, but I don't know whether there's any ethanol in there, or if it all turns into weird ketones and ammonia.

Definitely sounds scarier than "crumbled up protist skeletons." Assuming of course, the brewer is using a non-centrifugal filtration technique.

I still remember looking over at the head brewer one day as he was loading more DE into the filter bed and realizing with shock that he wasn't wearing a mask. Took the opportunity to describe what it's like (from an observer's point of view) to die of lung cancer; he started using an industrial grade respirator after that.

One thing unmentioned is since Cynar is made from artichokes it alters your taste buds and like artichokes makes things taste sweet.

The inventor of Cynar, Angelo Dalle Molle, was a techie philanthropist.

The douchiness is his schtick.  The Malort review is gold.  He's done Colt 45 and those awful wine/cocktail balls that are sold around the holidays.

There's also a subplot about his ex-wife and his brother and living in his car and sneaking into his brother's rental properties to do on the show because he's an unemployed sommelier.

Maybe fining with isinglass is more comparable to getting a vegan to drink wine out of a sheep's bladder.
