While growing up dad was a partner in a large hardwood lumberyard and mill, so i became very familiar with most woods through working at the mill and later in sales. I have to say that birch is my favorite tasting wood. If youve ever chewed on a popsicle stick, thats birch wood. Oddly enough maple wood doesn't smell or taste like maple. Second would be white oak, used in wine and booze casks because its nonporous and adds flavor and character over time. Third would be cherry, it does have a faint sweetness to it. Favorite smelling wood is eastern red cedar which cedar chests are built with as it repels moths and bugs. No way would i want to drink it though...

That's fermented birch sap, not the wood. It's the equivalent of fermenting maple syrup and running the result through a still.
