With the exception of maybe Harrison Ford, why is it that any time an actor participates in "Star Wars", suddenly that becomes the be-all and end-all of their career?

It happened to Sir Alec Guinness (and he despised it), it happened to Ewan McGreggor (I think of Trainspotting or Shallow Grave first), it happened to Natalie Portman (I think of Leon or Black Swan first)... and now it's currently happening to Giancarlo Esposito (nobody mentions that he was and is Gus Fring anymore).

I hear people refer to Christopher Lee as "Dooku" way more often than I hear Dracula or Saruman.

See, when you say Trainspotting, Shallow Grave, Black Swan or Saruman, a good number of people have no idea what you are talking about.   If theyve seen them, they dont likely remember much.

Everyone remembers phantom menace, even if its just because they were disappointed.   Star Wars means stuff to people.  Shallow Grave means stuff to much fewer people, even if they had better performances.

Its why, I think (at least to me) Jules Winfield is more "Samuel L Jackson" than his Star Wars character.  Because Pulp Fiction was groundbreaking and more memorable.

Lord of the Rings was just as successful and ground breaking as the prequels (not to mention significantly better films).  Just as many people known Lee as Saruman as Dooku.  They are equally iconic roles.

I only see Gus Fring in Mando. I figure he survived the explosion, and decided to get out of the chicken/meth game and get involved with the empire. Or maybe he uses the empire to move meth.

No, Star Wars was a long time ago. He survives Mando and goes into the chicken meth empire, not the other way around.
