Yes but one of those things is visually unappealing and pretty greasy. I'm not going to make a taco out if the thigh meat unless the apokolyps has come about and I'm raising chickens off somewhere and I really don't have a choice.

This recipe is what made me fall in love with chicken thighs. It's in my top five things I've ever cooked. Sorry if you get a paywall -  I think they give you a few freebies first.

Bone in skin on chicken thighs, roasted until the skin is crispy, are like a good steak. Salt and pepper are the only ingredients needed.

It's not just that they taste better to begin with, they are incredibly more forgiving to cook as well. Pan seared until internal temp is appropriate? Yummy. Simmer in sauce until the wife gets home from work who knows when? Yummy. Roast in the oven and got too involved in Gilligan's Island rerun only to remember a little later? Still yummy.

Try doing that with a chicken breast.

yes. BUT not for fried chicken. thighs are just too fatty to taste good when also fried, to me. for divine fried chicken (bone in) breast is still best........

I've always just done breasts because of the protein to fat ratio, don't really care If the dark meat is tastier, it's all getting cut up or shredded and made into a taco or stirfry anyways. All the chicken really adds to those is being the source of protein.

when i was a kid in germany, my mother got wings free from the butcher; no one else wanted them.

wings were dirt cheap in usa, but now everyone knows how yummy wings are and they are getting too expensive for me :(

Chop the meat.
Fry with cumin, chili powder , garlic and pinch of sage.

I have a personal email customer that insists on all chicken breasts instead of thighs.. which is cool, since my local King Soopers has had chicken breast on sale for $1.87/lb since November. :)

make me some tea: Bone in skin on chicken thighs, roasted until the skin is crispy, are like a good steak. Salt and pepper are the only ingredients needed.


I used to start them skin down in the cast iron on medium high heat to get that crisp, then flip them and roast them in the oven and they would always come out the star of the meal, even with minimal seasoning.

Then I got priced out of eating chicken.

(Canadian meat prices are so much higher than what has been posted here)

I think the reason white meat is more expensive is because restaurants like the breast because you can do more boneless shiat with it (fillets, chunks).

Wow that sucks about pricing.

I simply roast them in the oven, no flipping or searing necessary. I know they're done when the fat is rendered out.

More recently I've been baking them in the air fryer (Ninja), and they come out beautifully.
