I remember the worst chicken wings I ever had...my friend and I went to a scuzzy pool hall on the lakeshore in Etobicoke; ordered a plate of wings and they were the smallest, stringiest chicken wings I ever saw. Like they dug them up from an 3000 year old Egyptian sarcophagous. And on top of that it looked they used Shake n Bake to coat them

foo monkey: So, like every Super Bowl weekend?

It shot up for the Super Bowl (as per usual), but it never came back down.

My place is paying arounf $140-145 for a 40lb case of #6-8 (meaning they're sized so that a lb should be 6-8 wings)

They're normally $95-105 all year pretty much, excluding the superb owl.

I'm old enough to remember when the wing was the *least* desirable part of a chicken.

I've never understood the hate for repeated threads. If I don't want to read it a second or third time, no one makes me.
But the chicken-wing shortage repeat? I hate it.

As long as there is no buffalo shortage.

We took it off our menu it got so bad. The last 2-3 cases we got the wings and flats were like half the size of my pinkie finger.

Meh. They're one of the most overrated foods. Love them if you want, but I like actual good chicken better.

Buy drumsticks instead. I picked up 4 pounds for 5 bucks the other day. Talk about a big chicken wing!

Well at least the cauliflower wings are the one plant substitute I can actually tolerate.

Then again isn't a wing just a means to transport sauce from your plate to your mouth?

Drumsticks are fine on their own, but IMO the reason wings work so well is that it's a solid meat to skin to sauce ratio in each bite (as long as they're not over sauced).

The hey are more tedious to eat, but worth it.

I know I don't need to be talking out of school lest the prices go up. I'll take the beat down.

Buy chicken leg quarters. A 10lb bag of leg quarters was $4.99 this week. A few weeks ago I scored a 10lb bag for $1.00. Now granted they were frozen into a solid block and my guess is that these may have been from the oldest hens that have stopped producing on an egg farm, but they make great stock/broth.

Hadn't noticed. Every chicken I buy still has the requisite number of wings.

There is no shortage of chicken wing shortage posts on Fark dot com. With all the links in the food tab, it's hard to keep track.

A healthy combo of the above. Chicken wings were damn near a throw away item when I was a kid. Some butchers would put them bagged in the meat case with a ridiculous price like 99 cents... for several lbs.
Wings are the least healthy part of the chicken to eat and are really only the sauce/flavor you put on them.

majestic: Buy drumsticks instead. I picked up 4 pounds for 5 bucks the other day. Talk about a big chicken wing!

Exactly!
This how I usually make my drumsticks:
1/4 cup soy sauce
2 tbsp hot sauce (Frank's Red Hot is perfect)
1 tbsp sesame oil
1 tbsp garlic juice (or 6 cloves garlic, minced)
1 flat of drumsticks, skin removed, (about 5lbs?), just enough to tightly fill a 9x13" pyrex dish.

Arrange drumsticks in the pyrex dish.
Mix the rest of the ingredients and pour over the chicken.
Let sit for 1 hour, flipping once.
Bake at 350 for about 30-40 minutes, until the meat starts curling from the bone on the skinny end. Remove from oven, flip one more time and let cool for 15-20 minutes.
Serve, then place lid on pyrex dish and refrigerate when at room temperature.
(bonus: makes a sauce that solidifies when cold)

"But you just never had GOOD wings!"

100% agree.  I don't want to be working on a wing for 10-20 seconds to fish the bit of actual meat out of the gristle.

Plus they're the lollipops of chicken - at the end you're left with trash.

I knew a guy from Mongolia (not that it is important), but apparently where he grew up  his family taught him to eat the chicken wing bones, they would make his bones stronger.

It was like listening a lion on the Serengeti, the bar told him he could only eat them outside in his car.

I they are the type that doesn't eat the small amount skin on the tip part. That skin on that little piece is the most flavorful part.

I had given up on wings at our local places because they seemed to be following the "candy bar model", sized to price.  Last night our daughter took us to an Epic Wings down in the other Inland Empire.  Nice to see that someone is still doing it right.

A wing isn't "gone" until it's cartilage free.
