No, that's smoked salmon. The wiki page for lox says this on the process:

Scotch or Scottish-style salmon. A mixture of salt and sometimes sugars, spices, and other flavorings is applied directly to the meat of the fish; this is called "dry-brining" or "Scottish-style." The brine mixture is then rinsed off, and the fish is cold-smoked.


Smoked salmon is wonderful and a welcome addition to many dishes. Lox is a barely tolerable addition to some bagels.


That could go back to the quality of the salmon used to make it, as TFA mentions in regards to smoked salmon made from farmed v. wild salmon.

I had a foreman that used to smoke his own. Was weirded out by this good ol redneck offering me what looked like raw fish on a job site, but holy shiat he knew his shiat. Kinda sweet, kinda smokey, texture was perfect.

Sometimes the good Ole boy that like to talk about church and speaking in tongues will surprise you in a good way.

I've got a fish store near me. They do fantastic smoked salmon bellies with the fat still on. They sell it inexpensively because most people want the marbled lox. These bellies are so fantastic on an everything bagel that I don't even need the Philadelphia Cream cheese.

Doesn't anyone ever eat hot-smoked salmon? When did smoked salmon become synonymous with just cold-smoked nova lox?

I love them both, but it seems like nobody ever talks about hot-smoked salmon.

I had some smoked salmon in Dublin that was fantastic.  Not salted, just smoked (hot, I think).  Amazingly good just by itself.  That said, I'm a slut for even mediocre smoked salmon on a bagel with cream cheese and capers.

I think I was like 20 and I visited a real fish market. I asked how to cook the smoked salmon and he thought I waa trolling him. There's a fine line between ignorance and being a dick. Offline, anyway.

I love smoked salmon on a toasted bagel with raw onions, in-season tomatoes, capers, and cream cheese. Bacon and/or eggs are okay, but unnecessary.

I don't like the texture.  It's all dry and weird.

I grew up on Montreal style bagels. Smoked salmon was an obligatory and tasty part of my childhood.

cheapskate that I am, I tend to buy whichever is a better deal - hot smoked, novalox, gravlax, etc. and then eat it in whatever fitting way. altho' as ski9600 mentions, on a triscuit is most certes one of the usual ways 'round hyeah. with a soft double/triple cream cheese, if'n I'm so fortunate to have some.

was trolling my own friendface to look for helpful photos, but all's I could find was:

"so, peaches sent me some very lovely cod - and more salmon than I can possibly eat in 2 weeks. the salmon was so beautiful that I had to cut a bit off the small end of the fillet and eat it raw. except for the skin, which is now frying to crispness on super-heated cast-iron."

Tangentially related: am I the only one who farking hates capers, but loves their flavor? Eg, if I make a sauce like a piccata, I'm absolutely putting capers in it. But I'll be damned if I don't strain them out afterwards, because I can't stand anything about them other than the great briny flavor they give.

I think this is one of the reasons I've never really been a fan of smoked salmon, it damn near always has capers involved in some way.

I'd love to try whatever you think is good smoked salmon.  I just haven't run into it yet.


I was just joshing you. Some people don't like salmon, smoked or not. And that's ok.

For me, the best smoked salmon comes out of my Little Chief. Alder chips and and a litttle brown sugar and salt on top make a fine treat. Helps that I live in the PNW. :)
