Looks at bon appetit.

There's literally no difference between farm fresh eggs and store eggs. They're the same types of chickens coming from the same hatcheries. One gets outside more.

The real difference between the poultry butt nuggets in the backyard and the ones at the grocery store is 1) they're washed, and 2) they're less old.

Wait a week or two and the egg will have lost some water. This makes it easier to peel after being cooked.

Second) Eggs in the shell don't really care how they get to temperature. You can hard boil an egg in the oven, a pan of water, or in the instapot. I do love the instapot because I can get a couple dozen or more done in a go and it only takes a few minutes which is great for when I have a need for a ton of hardboiled eggs like for deviled eggs.

Once they're cooked to time shock them in ice water. It helps separate the egg membrane from the shell.

Very true. You don't even need an ice bath, just running cold water works fine.

The only thing that matters for peelability is putting them directly into boiling water.  If you bring them slowly up to temp, you're going to have a bad time.  The ice bath at the end is theater.  I just pour some cold water over them, so my fingers don't get burned.

There's a hundred ways to boil an egg, but at the end, all you'll end up with is a boiled egg. And that's not good.

I've boiled two eggs under exactly the same conditions and had them turn out completely different.  One slid put of its shell like a drunken introvert and the other looked like a deformed soccer ball when I finally picked the last piece of shell off it.

yes. we all know this already:

don't use super fresh eggs, if you have laying hens use those fresh beauties for fried eggs with runny yolks!

DO put cold eggs into already boiling water, lower them in with a spoon to prevent cracks.

DO put them in ice water, or running cold tap water, right away to halt the cooking at your prefered doneness.

and finally take out that trusty SPOON again to peel them! for really stuck shells, use the spoon method under running tepid water. shells will slide off!

I use Chef John's method.

Fingernail of water in pot. Steam on medium heat for 9 min for ramen eggs, 12 minutes for salad eggs. Plunge into ice water, crack em a bit. Wait ten minutes. Peel.

Perfect every time.

I've found my method pretty idiot proof.

Put your eggs in a pot of cold water until they're just submerged. Bring covered pot to a rolling boil and immediately turn it off. Let these rest for 8-12 minutes depending on how you like your yolks, then rinse under cold water or give them an ice bath.

Pretty simple

No matter how many different recipes and methods I've used to make hard-boiled eggs I always find that in the end, they are ova cooked.

1) Mis-typed soy-marinated eggs. Mrs. Nuran makes those the way her mother and grandmother did. They don't have to be soft

2) For that brief shining moment when we could go to restaurants again and sit down to eat food that someone else had cooked two minutes ago we discovered that everyone had started undercooking eggs. "Hard boiled" the yolks were mostly liquid. "Hard fried" likewise. Eat what you like, but if you're paying someone to make it for you and you specifically ask for it it's not unreasonable to get what you ordered rather than a lecture from the wait staff about how it's "better" some other way. Mrs. Nuran is Chinese enough that she tends to thoroughly cook everything including green salads. That's her culinary kink, and I support her.

The only reason this shiat is Boring is because I can't pick a fight with anyone.

I'll take 25 pizza threads over a godsdamned boiled egg thread just to claim my moral and taste superiority. Give me cilantro so I have someone to pick on for being genetically inferior.

It's boiling eggs and I technically do it the wrong way. Water in pot. Eggs in pot. Heat water to boil. Check later. Hardboiled? Stop. Soft boiled? Tasty treat while I wait another minute or two. Don't pay for water so let those suckers sit under the open faucet on cold.

Done.

egg salad?  Mix with mayo or guac or sour cream and mustard. Add pepper and salt.  Done.

Hard boiled is hard boiled how ever you achieve it.

The shock at the end is the important part. And peeling them in the water does let you separate shell a bit easier. They're eggs, not rocket science.

You want to peel beets? Shock and peel them IN your water. If you've cooked them long enough, the skin will part with the pressure of your thumb. Shocking is pretty much always a good idea, from pasta to any boiled vegetable that you want to serve later, or chilled. Better color, better texture, easier to handle.

I am SO over boiling eggs... I discovered steaming them does it perfectly every single dang time.  You don't even have to dunk them in water after you pull them out.  Easy to peel and everything.
