I've been given a nice steady supply of free range eggs, and am now cooking for one. I know quiche freezes well. I've baked several in the past, and frozen quarters for later. I don't know that baked phyllo would, but I'll try a small one. I love spanakopita. That custard dish above looks tasty, too.

There is a Greek Orthodox church in town and every summer they have a Greek Fest. Lots, like Old World Grandmother "I'll just make a bite for you to eat," levels of food. I'll have to look this summer to see if they have this galaktoboureko. Of course, that may cut into my baklava allowance...

 Spinach is awesome. I use it instead of lettuce on sammiches. And don't get me started on spinach salads. Even if your sammich or salad is covered with unhealthy stuff, it's still good for you. So you can rest easy knowing that the 900 calories you just inhaled at least included one responsible dietary decision.

I've been trying to go meatless two or three days a week. Spinach pie has supplemented my iron.

To tell a secret, though, I've been making the crust with duck fat.

when I was helping raise my little niece, there was that same thing every summer in their town, it was sort of our yearly tradition. never saw anything like that galaktoboureko but man was there always ever 17 different kinds of baklava.

it's so hard to choose!!!

Strata-Various Pie

INGREDIENTS
1 Eggs ; separated
175 g Ham, sliced
10 oz Spinach, frozen
3 Eggs
200 g Cheese, sliced
1 tb Butter
2 Pie crust
1 Garlic cloves, crushed
1/4 c Onions, chopped

In a large fry pan, saute onion and garlic in butter. Add spinach, cover and cook until spinach softens. Drain very well; set aside. Whisk together 3 eggs and 1 egg white. In one pie shell layer half the meat, cheese, and spinach; cover with half the beaten egg mixture. Repeat layers. Invert second pie shell over top; crimp edges. Brush top with remaining egg yolk mixed with a bit of water; slit surface. Bake pie on cookie sheet 30 - 35 minutes or until golden. Serve warm or cool.

Near-absolute carnivore, here. Spanakopita is delicious as is. Subby sounds like he's a few 5 Guys Bacon cheeseburgers and medium fries away from a quadruple bypass.

It winds up in my scrambles and omelettes, on my sandwiches, as my salad green. Sometimes I will just eat a bowlful raw with some oil, salt, and pepper.

My favorite, though, is to wilt some down another green (mustard, chard, or beet) with garlic, shallots, lemon juice and a bit of white wine. Top side dish for me hands down.

Spanakopita is great and dead simple to make.  We have it fairly often.

i also love a spinach "quiche" -easy on the eggs and heavy on the swiss cheese, monterey jack cheese, some small curd cottage cheese, and fresh garlic- baked in a regular old bottom pie crust (i par bake mine then fill and bake some more).

subby is silly with wanting the spinach eliminated.

Hungarians have a similar dish called kremes. Two layers of puff pastry with a thick custard between them.

I often perform the heresy of cottage cheese in lasagna, because I'm a savage. or wherever ricotta may normally be found. like on white pizza. love the stuff, can never get enough. this sounds really good too!

we are alike that way on the lasagna, my hellion. although i still do small curd.

but for the spinach quiche i do low fat (but never fat free) because the swiss and jack add plenty of fat already.......

ah good point about all the cheese in that quiche. hmm, I should really consider that for lasagna as well, because the amount of mozzarella I use already borders on the obscene.
