Cornelis de Gyselaer: Peas Suck

People tend to overcook peas until the texture is disgusting. They need to be al dente and not out of a can.

The dish in the article sounds perfect for a balmy summer dinner with friends alfresco.

peas? ok. good. even in e.g. a carbonara.
goat cheese? ok. good.
mint...?

man, call me an uncultured philistine peasant, but I remain unable to comprehend mint in savory dishes.

Wanted to make this recipe the first time I saw it, but the wife isn't a fan of goat cheese.  A shame because it sounds like a great combo, and simple.

A pity because a sprig of mint really completes a biryani.

Always eat every carrot and pea on your plate.

I'm in exactly the same boat. I can't convince the wife to even approach chevre, never mind eat it, and she's a cheese fan.

Yeah, she doesn't like the "mustiness" as she describes it, but generally likes all other cheeses including the really pungent ones.  So the only time I really get to incorporate goat cheese at home is in a salad or finishing other dishes with it, giving her the option of an alternative.

Sub in cream cheese perhaps? It'll still give you the tanginess without the funk.

I... I maybe kind of understand it?

like, if the store is out of the usual green chutney

then sure, I'll get the "mint" one. but really only because it's quite nearly identical.

//I d'nno, really more used to mint as a garnish & breath-freshener
///or a floor-wax/dessert-topping

For Mrs. FormlessOne, it's the tanginess that's the problem. She'll tolerate cream cheese or mascarpone, but goat cheese is right out.

Oh, that's easier then. Just use heavy cream. Granted, I may be trying to solve a problem that doesn't exist.

My wife recommends adding a little plain yogurt to a dish if you are using cream cheese in place of goat cheese.

huh! tell a lie, I actually have made that! well, strawberries. and chevre, not feta. but yeah, mint! and balsamic.

wacky friend from Portugal taught me to dress strawberries with freshly ground black pepper. holy-wow is that ever astounding.

alternately, salt on watermelon (and also bananas) I think is some nonsense I learned from Sesame Street?

No, you've hit on my usual solution - cream cheese (if texture's needed) or heavy cream. I just wish I could find a "kinder, gentler" chevre that'd work for her.

For a long time, the only goat cheeses widely available in the US were either crumbly nor hard in texture with a funky flavor. These days there are slighter, milder varieties.

My bachelor chow fav was:

Mac-n-Cheese and Tuna and Peas. Made exactly like it sounds.

1. Make your favorite Mac-n-Cheese
2. Can of tuna with mayo
3. Cup of Peas
4. Mix together and serve

It sounds gross but taste amazing.

Goat cheese is horrid. It tastes exactly like a goat smells, because goats actually secrete the same oil which gives them their scent into their milk. It's disgusting.

Sounds like a fine recipe with (sheep only) feta or ricotta.

Take away the mayo.

Add bacon and hot sauce instead

Best bachelor chow (pronounced "yow" like Ren n Stimpy) is instant stuffing with ranch and hot sauce.

My brothers used to put tuna in their mac and cheese.  It looked gross, so I did not partake.
