The churning action during the freezing process is what keeps it smooth. Otherwise it's just frozen cream, sugar and flavor.

There are all kinds of foods whose texture depends upon the method used in preparation. Lemon meringue pie would be utterly different if you topped the pie with a sweet, flat egg white omelet, instead. Gravy would be grease and glops of whatever binder (like flour) if not stirred during preparation.
