Rene ala Carte: We have a shop nearbye called The Cheese Lady. They don't make cheese, but import it from everywhere, as well as carrying many domestic cheeses. Over 100 varieties last time I asked. They have just about run out of room on the chalkboard where they keep a list.

Now, they have included a small wine shop in one of the rooms in the old Victorian house where the shop is located.

It is really easy to get carried away in that place.


Time to make a hiding place beneath the stairs and live there forever.

Oh, and this weekend, I had on the cheese board - Irish cheddar, Yancey's horseradish cheddar and a hickory smoked gouda.

An old friend of mine, one of my sister's exes, is a cheese consultant. Back around 2000 or so, which is the last time I heard from him, he was billing out at $1,200 a day plus expenses.

One of his clients was France. As in the Government of France. He was a kid from upstate New York, and France hired him for advice on cheese.

Tried Tête de Moine  for the first time last week. Got the cultures and will be making a couple pounds tomorrow.

There's a similar place about 20 minutes from me named C'est Cheese.

They have some INCREDIBLE maple bacon cheddar.

huh, that is a new one one me. ahhh, swiss, no wonder it must be rare and espensive, lol. farking swisslanders.

yeah, I used to have one helluva time finding non-pasteurized yogurt, as a starter for me making metric fark-tonnes of whole milk yogurt, as a precursor to me making Quark/tvorog and paneer.

meanwhile, here's one I may have left out earlier: Delice de Bourgogne. (l-r, is: stilton, delice, raclette (AGAIN THOSE FARKING SWISSLANDERS!!! stuff ent cheap!))
