We have a shop nearbye called The Cheese Lady. They don't make cheese, but import it from everywhere, as well as carrying many domestic cheeses. Over 100 varieties last time I asked. They have just about run out of room on the chalkboard where they keep a list.

Now, they have included a small wine shop in one of the rooms in the old Victorian house where the shop is located.

It is really easy to get carried away in that place.

That's a very poorly constructed cheese tray. It needs a nice soft cheese to round things out. Like maybe a mound of cheez whiz or a hunk of Velveeta.

An old friend of mine, one of my sister's exes, is a cheese consultant. Back around 2000 or so, which is the last time I heard from him, he was billing out at $1,200 a day plus expenses.

One of his clients was France. As in the Government of France. He was a kid from upstate New York, and France hired him for advice on cheese.

huh, that is a new one one me. ahhh, swiss, no wonder it must be rare and espensive, lol. farking swisslanders.

yeah, I used to have one helluva time finding non-pasteurized yogurt, as a starter for me making metric fark-tonnes of whole milk yogurt, as a precursor to me making Quark/tvorog and paneer.

meanwhile, here's one I may have left out earlier: Delice de Bourgogne. (l-r, is: stilton, delice, raclette (AGAIN THOSE FARKING SWISSLANDERS!!! stuff ent cheap!))

another bizarre oddity of wrong-cookery I used to make as a child was, "knox blocks"

I really cannot recall the source... Electric Company? 3-2-1-Contact?

but ennaways - take your favorite jello flavor, and prepare by also adding Knox unflavored gelatin.

which results in a tray (and then you slice them into ~cubes) of still-flavorful jello, except it does not melt, does not run, stays in stable form even at room temperature.

There's a similar place about 20 minutes from me named C'est Cheese.

They have some INCREDIBLE maple bacon cheddar.
