Seriously. The Blue Stuff is the best.

It's amazing with beef and scotch. Follow it up with some dark chocolate with raspberries.

It depends what it is for..  I like most of your standard wine and cheese favorites. Munster, Brie, Gruyere, Manchego.

But for gorging on cheese, I prefer Edam. It is like a Gouda. Both are Dutch but Edam has a softer flavor. It also doesn't melt as fast. So you can hollow out the ball of cheese and fill it with ground beef, like for an empanada, and put it in the over the melt. If you have leftover meat, you can use a separate small oven pan to do a layer of cheese, meat and cheese with what you scooped out of the center of the ball. PS. Chopping some sausage in the ground beef is a plus.

Once attended a "White Trash" party.....I can say that, I'm white trash.

Anyway, I was surprised at how many different flavors of Mad Dog 20/20 had been developed since I was in seventh grade, but I was more surprised by how many different "flavors" Velveeta makes.

Reblochon, mimolette, bleu d'Auvergne, morbier, camembert, brin d'amour, crottin.

Grand Cru and bourbon Bellavitano shredded into a roux with mustard, onion, and two eggs tempered in, poured over elbow macaroni and baked with a panko topping.

It's like what macaroni and cheese would be if it were served in heaven and took about a week off of your expected lifespan.
