Koreans who lived through the war and postwar recovery generally won't touch the stuff -- unpleasant memories. But it is very popular with younger folks.

Every time I introduce some one to Jambalaya they ask what meats I use. The answer is always the same.

"I use chicken and sausage, but the ancient cajuns used whatever the hell they caught that day . . . or managed to scrape off the highway."

It's pretty good, of a little on the salty side.

If you've got an H-Mart near you, the cafe serves a good representation.
