Radishes germinate and develop quickly, and their greens are edible when young.  All good characteristics for long-duration space flight.

Even more importantly, they have strong sinus-clearing sulfur compounds (the 'heat').  Astronauts complain of reduced senses of taste and small in microgravity, due to the redistribution of bodily fluids upwards into the torso and head, and they love foods with some punch like shrimp cocktail (the horseradish sauce).

Back when I had a house (divorce sux) I grew a lot of radishes cuz it was 30 days seed to chow down.

That said, the Lost in Space episode with those veggies was when 8 y/o me looked at dad and said "dafuq".  For which he caned me painfully cuz I said fuq, but we lovingly decided Lost in Space had jumped the shark a decade before the fonz made it a popular meme.  I think we still watched the rest of them but I think that veggie ep was towards the end of the last season.
