Roast Pumpkin Seeds

1/4 tsp. Cayenne
1/4 tsp. Dried habanero pepper (we make our own, if not available any other chilli or smoky spicy powder)
1/2 tsp salt
1/4 tsp garlic powder
2 tbsp. Canola Oil
1 tsp Chilli infused oil
1/2 tsp Sweet Asian Vinegar (Mirin)
1 tsp brown sugar

After you scoop the pumpkin, sort the seeds, rinse them and soak in a salt and water brine at least four hours.

Mix the dry, place in a ziploc bag, add the seeds and the wet. Seal the bag and shake vigorously, you're looking for an even coating.

Roast on aluminum foil over a baking sheet at 300 for about 40 minutes.

We're also doing a traditional salt and warming spices and a sweet (maple syrup, cardamom and vanilla) batch this year.
