Actually, fried food is about the only thing these chains do well.

The team has responded to this unprecedented environment by unlocking organic growth through the introduction of It's Just Wings

Their prices on wings are great compared to competitors and they have really good smoked wings, which aren't common among wing restaurants.  The only complaint is the sauces are lackluster.

The concept of the "virtual restaurant" is an interesting one as many of the real restaurants aren't associated with delivery or have these super broad menus that you're not interested in when looking for delivery.  Pairing it down to wings, or bbq, or salads, or whatever probably does a lot to get more consideration in the delivery market.
