Niiice. I love Yukon gold potatoes sliced up and roasted in duck fat. It's honestly rich enough that I can't eat a ton of it, which is probably good. I feel like chicken schmaltz would also be fantastic.

Also, yes to the bacon fat, of course. Butter is fine if you don't have any bacon fat on hand, but there is little in this world that beats a dirty-fried egg.

Worlds best hangover cure: two slices of toasted bread, slathered with mayo, several slices of crisp bacon, a dirty-fried over easy egg, and the cheese of your choice (I like Colby jack here, but damn near anything works). Clinically proven to be the best food for a hangover (not even joking, some British dudes did a study, because of course they did).

Potatoes roasted in schmaltz is, in fact, delicious as all get out.

I did too, until I learned the trick of using the spatula to spread and thin the egg white near the yolk with little scratches away from the yolk before it starts to cook, so that it is the same thickness all around the egg.  That way there's very little clear snot but lots of yolky goodness.

Yes, that fleeting state of yolk between the runny and the hardened. Yes, just before full gelatinization, YES, still viscous. Oh, man. Yeah. That was good. How's the toast?

I watched a Youtube video a couple days ago where she fried an omelette in about 1/2" of oil in an 8" pan.  All I could think was "damn that looks tasty" while listening to my arteries slam shut just thinking about it.

I already do that. Do something with brussel sprouts and also with green beans.

Though with the green beans, I like adding in red pepper flakes, mirin, lots of fresh garlic, and some sesame oil and sesame seeds. Put that on top of rice with some eggs with runny yolks.

Instead of taking the time to roll them up, I make stuffed cabbage stuffing and just cook the cabbage in it.

Add a teaspoon to your green beans and simmer on low for a couple of hours!
