When we lived in Turkey, the canon fired at sunset during Ramadan signaled that it was mad rush time to the local bakery, where we picked up fresh flatbread made in an enormous wood-fired oven.

It was fluffy with a nice crust, and was infused with some small black seeds that to this day I haven't been able to find.  They weren't sesame or poppy seeds, either.

Topped with fresh olive oil and feta, it was delicious.

I'm gonna slightly hijack this thread for a second, I have a friend who swears that pizza dough has scientifically been proven to be better in California because of some bacterium in the air. While this sounds like a full of shiat statement, I'd like to know if anyone else has ever heard of this nonsense.

Europeans have breads the way American supermarkets have snack foods:  whole aisles of them. That is one thing I loved about Europe, although the chips and sausages were expensive, and the bread was relatively cheap.

As a rule, people need to be more like each other, which is to say amazingly diverse.

My grandmother used to bake her own bread.
She had a big knife that could cut through four loaves at the same time.
It was a four loaf cleaver.

More full of shiat than you realize. Northern California bakeries are renowned for the insect poop in their grains, which is rich in Lactobacillus sanfranciscensis bacteria, considered key to San Francisco's reputation for having among the world's best sourdough cultures. [popsci]

Now I'm doing keto because my bread is TOO good.

My grandma's bread, fresh out of the corn-cob fired oven, slathered with butter from the cows on her farm and  jam made with strawberries from her garden.   It's been almost 60 years, and that's still my gold standard.

I like to prep it at night and let the dough ferment in the refrigerator overnight. It gets a lovely boozy flavor to it.

Similar for me for my Corsican aunt but it was an open face baguette with fresh butter and a slice of ham from her pigs

Ehhh...I went there and couldn't find a single farking pretzel. Was NOT impressed.

Fresh tortillas are amazing. Tortillas are already versatile and pack easily for long hikes and stuff. Fresh made is just so much better.

Then when they are no longer fresh? Cut em up, fry em and make migas.

Star Market in Hawaii had this amazing cheddar jalapeno bucket bread. I would eat half the loaf on the way home. Now I live in Vermont so it's the rolls at the Wideside Diner dipped in their brown gravy. Arglhhhh....

I'd say it's fairly impossible to pick a single best. So many varieties that pair with different occasions and cuisines. For versatility If day a fresh rustic loaf or baguette works. For a little bit of a sweeter dessert or coffee bread I highly recommend Finnish Pulla. And with fresh warm hummus I'll always go with right out of the oven Laffa bread over Pita.

Many years ago I had a manager who was Lebanese. About once a month he would bring in some man'oushe that his wife had made. It was delicious.
