I haven't really done anything with mine other than just cook them down to a sauce.

gazpacho

5 large ripe tomatoes (about 2 lb)
1/2 English cucumber, peeled, chopped
1 celery stalk, chopped
1 green pepper, cored, seeded, roughly chopped
2 green onions, trimmed, roughly chopped, more for garnish
2 garlic cloves, peeled, roughly chopped
Extra Virgin Olive Oil
Salt and pepper
1/2 tsp cumin
1/2 tsp to 1 tsp cayenne pepper, optional if you like spicy
Pinch sugar
Small handful fresh, mint leaves, torn or chopped
Small handful fresh cilantro leaves, torn or chopped

The vegetables, other than the tomatoes, can be substituted with almost anything handy.

about 8 tomatoes, peeled
1 bottle tomato juice
1 stick butter
1 pint of heavy cream
lots of salt

Combine everything but the cream in a pot and heat. Use an immersion blender. Add the cream. Blend again and serve.

Oh, yes.  Blend everything until smooth.  I don't bother skinning and seeding the tomatoes, most people do.  A tablespoonful or two of olive oil works, also works without it.

Slice tomatoes then quarter slices.  Cut garlic clove in half and rub cut side all over plate with vigor.  Slice and quarter mozzarella and distribute on plate.  Dump on diced garlic and shallots and tomatoes.  Sprinkle fresh diced basil.  Pour good olive oil generously.  Drizzle aged balsamic all over.

Enjoy straight or on bread.

Caprese salad, tomato pie and, like natazha said, gazpacho although I substitute cilantro for Italian flat leaf parsley because, yuck cilantro. And don't forget the avocados.

I can ratatouille every year.  Eggplant, zucchini, yellow squash, peppers, onions, tomatoes, herbes de provence.  Put up 15 pints last weekend.

You'll need some extra tomato juice if you're using romas.  Grill all the vegetables (except the tomatoes) to add extra flavor, reduce the need for oil, and keep the kitchen cool.  Chop, toss in a big pot, add the tomatoes, tomato juice, and herbs.  Let simmer for about 45 minutes, then can.  Add some extra juice to each can if necessary to keep everything submerged.

Proportions aren't really important, just want to have some of each in every jar.

My sister has a large crop of tomatoes this year. I am to be gifted a care package of sun dried/dehydrated tomatoes shortly I hope. Those are great on homemade pizza.

growing up - we had a large freezer we kept in our shed and would freeze whole tomatoes to use all winter long. to use them - just drop them in boiling water for a minute to remove the skins, chop them, and use them for a sauce. after freezing - you won't be able to slice them on a salad (will be mushy), but they work great for a sauce or to add to a soup or stew.

I'm going to can a bunch of mine from the garden tomorrow.  if you have a bunch of cherry tomatoes - you can put them on a smoker and dry them out.  that should work with Romas as well, but you may want to half them and remove the seeds

also - tomato bruschetta. chop several tomatoes, add a few cloves of garlic (more the better), basil, salt, pepper, and olive oil. take some good bread - brush with olive oil and grill until golden brown. rub the bread when it's still hot with a garlic clove. serve the tomato mix over the bread - absolutely delicious

3 romas, 3 tomatillos, garlic, and some sort of pepper (jalapeno, serrano, whatever-o) simmered for a few minutes, drained, cuisinarted with salt and cilantro, and you got a stew salsa!

Freeze in flat zip lock freezer bags, which stack neatly. Use as needed for: stocks, sauces, pizzas, condiments, soups, drinks, marinades, facials.

Panzanella: a cross between gazpacho and bruschetta

Santorini tomato fritters: basically, leftover salsa plus self-rising flour

Bruschetta, caprese, salsa, gazpacho, and shakshuka have all been mentioned, so I'll add in succotash - which can also take advantage of any fresh corn you got.

1/4 lb sliced bacon
1 small onion, chopped
2 garlic cloves, minced
4 ears corn, kernels cut off and cobs discarded1 large fresh jalapeño chile, seeded and finely chopped
3/4 lb cherry tomatoes (1 pint), halved
2 tablespoons cider vinegar, or to taste
1/4 cup chopped fresh basil

Cook the bacon, remove it to drain, and saute everything else in the bacon fat , starting with the onions. Return the bacon, and add vinegar, basil, salt, and pepper at the end.

Can also add okra if you like slime, and lima beans if you hate deliciousness.

Also, if you want to get crazy, tomatoes and strawberries can be substituted for each other, as they have very similar flavor profiles. So you can branch out to tomato jam, tomato shortcake, tomatoes and cream, tomato sorbet, tomato lemonade, tomato margaritas, etc.

Pasta sauces?

They're tomatoes.  You make tomato sauce.

You can also smoke them on the vine, they preserve fairly well that way at room temp or slightly less.

My brother smokes them (very low heat but not cold smoked,) then uses them to make tomato soup

sSautee celery carrot onion garlic in olive oil and butter.  Add seasonings (use a light hand, one wants the tomato to be forefront.)  Basil, thyme, black pepper, paprika are the general go tos, but almost any spice combo will work here.)  Then Add the tomatoes after roughly chopping them or passing through a food mill.  Add a pinch (1/4 tsp) baking soda.  Add chicken stock and reduce for a richer broth but can be excluded to remain vegetarian.  Simmer until thickened.  Add a splash of brandy or sherry.    Then blend smooth.  Best accompaniment to grilled cheese ever.

Lucky bastards, only one of my ten plants thrived this year, had some freeze issues in early spring and most of the plants are alive, but just didnt do anything. I envy you...

Tomato Salad

4 cups chopped tomatos per taste aprox 2lbs before trim and cut
1 cup sliced cucumber, 1 medium cucumber, seeded if preferred
1/2-1 cup thinly sliced onions per taste, I prefer red onions
1/2 cup green onions, chopped

2 cloves garlic, minced
1 tbsp fresh red basil, minced (mix genovese and thai basils)
3 TBSP EVOO
1 TBSP Balsamic Vinegar
1 TBSP Red Wine Vinegar
1 TSP fresh ground black pepper
1 TSP garlic salt
1/2 TSP salt
1/4 TSP red pepper flakes (optional)

Combine list 1 and mix
Combine list 2 and mix
Pour over list 1
Stir
Chill for 2+ Hours
Stir & Serve

Tomato Soup

1 & 1/2 lbs of tomatoes, roasted and peeled
1 quart chicken broth
1 red bell pepper, roasted and peeled
1 onion, chopped
1 stalk of celery
2 tbsp tomato paste
1 tbsp fresh thyme leaves
1 tbsp butter
2 cloves of garlic
1 tsp salt
1/2 tsp black pepper

Roast tomatoes and bell pepper over a flame until tomatoes split
and bell pepper is charred. Peel, chop and set aside.

Heat butter, add onion, celery and garlic until soft.
Stir in tomato paste, tomatoes, bell pepper, chicken broth, thyme,
salt and pepper.

Boil, then simmer for 15-20 minutes.
Blend with immersion blender, serve with croutons or toast and chredded
cheese.

3-5oz tomato juice
1/2 can garboanzo beans
1 tbsp GB juice
1/8 cup olive oil
1 tbsp red wine vinegar
1 tbsp fresh basil
1 clove garlic
1 tsp worchest
1 tsp lime juice
1/2 tsp celery salt
1/2 tsp garlic salt
12 turns FGP
4 shakes tobasco sauce

Blend it, chill and serve

I used chicken stock in my soup instead of the tomato juice.  Maybe a bit less butter and cream as well.  I also sieve out the seeds after blending.

/Obviously, I serve it with grilled cheese sandwiches.

Dice equal portions tomatoes and cucumber, add salt, pepper, olive oil, and your favorite vinegar. Also add, if you have available and you like,any or all of the following:
feta cheese
chopped & pitted kalamata olives
garlic
diced red onion
basil and oregano or other herbs
I like this as a quick side that I don't have to cook when it's hot out. It's really good after it sits a little while in the fridge or at room temp while you're making other stuff.

I , also, have almost more tomatoes than I can immediately use, and all the neighbors hide when they see me so I'm having trouble giving them away.

My favorite non-sauce uses:  Pico de Gallo and Bruschetta.
