Usually I start getting crabs around Memorial Day, but because of social distancing I haven't had crabs all summer. Very sad.

Question- how to order catfish that does not taste like mud? I've tried it a number of times, even the farm raised, it must be an acquired taste. Guess there's no fixing a bottom feeding (mud) fish's flavor.

UK's buttermilk trick is a good one. If you catch one keep it alive and throw it in a tub of ice cold water overnight, then clean.

Great suggestion! If I ever make it again. Otherwise-have only tried it off of friend's plates when eating out, and it was "interesting". Very popular in Philly, hence my exposure to catfish-and people who love it.

That trick works will all things food when it comes to water bugs/fish. It also works on chicken to get the gaminess out of freshly killed yard birds.

Oh, son.   You season the shells to get on on your fingers while you pick it.   The main flavoring occurs when you toss a couple of tablespoons into the beer (Narry Boh, of course) you use to steam the critters.   You know they're done when they stop eating their claws against the side of the pot

Thin shelled stuff like shrimp and to a lesser extent crayfish can help with a dusting of old bay.
For thicker shelled I recommend the following.
Shock the streamed crabs in a mixture of ice, white vinegar and old bay.
