Blue cheese dressing is kinda nasty unless accompanied by cayenne hot sauce.  But if you serve cayenne-soaked wings (not breaded tenders, wtf is wrong with you) without that blue cheese dressing, may God have mercy upon your soul.

The best potatoes I had in my life, by a long shot were these absolutely perfectly cooked baby red potatoes -- crispy, savory skin on the outside, light silky creamy inside, spot on seasoning, served with a simple, balanced aioli.

Esperpento in San Francisco.

Here in Buffalo we most often have out wings(not chicken wings please) with a side of blue cheese for dipping. Never ranch. And please don't bread your wings.... Big error there.
I like siracha on some various and sundry items, but it is kinda one note.

I am not a fan of plain mayo. But I am a big fan of flavored mayo. Especially if the mayo is homemade. Especially if garlic or sriracha or grainy Dijon or Cajun spices are involved.

I don't understand blue cheese and wings, and i don't understand the need for ranch dressing with the carrots and celery that come with the wings.

I always decline those condiments on account of finding them kind of gross.

One cafe' we stop by occasionally makes their coe's law dressing with mayo and mae ploy.  Pretty tasty.

Years ago I tried to make mayo.  Several times.  With no joy.

5-6 years ago I watched a review of blenders from America's Test Kitchen.  One of their tests was to make mayo.  Turns out half the blenders can't make mayo.

/ have not tried to make mayo in a good 10 years

LOL, I thought the same thing..I roast garlic, either in oil so I can have some spiked oil for later or I slowly cook it till soft on the stove top. Mash it up , add to mayo, squeeze of lemon..maybe some chives if I'm feeling crazy.

For some people, maybe. I can't get beyond the taste. If somebody sneaks mayo on a burger, I want to die.

Now adding roasted garlic to mayo sounds like a good improvement. A way to "Kick it up and notch" as we used to say.

Way back in college, a favorite was a korean burger joint that sold a big sack of the best fried mushrooms in the world for 3 or 4 bucks. Always came with and always asked for extra garlic mayo. Good eating...

The only place I used to eat garlic mayo was the Lebanese take-out in the Mall at work.

They call it donair, they call it pita, they even call it Lebanese cuisine, but garlic mayo is always an option on the salad, the lamb, the chicken, etc. And it is delicious. I'd prefer the rice or cousous to a aerated white bread bun, of course. Or even a good Kaiser bun.

oooh, thank you for the reminder - I'd learned earlier this year (possibly on fark?) that you can emulsify garlic - but there was also some sort of garlic shortage, so my tiny mind lost track of it. sent myself a remind just meow, this needs to be rectified!

I've come to appreciate different chilis not just for the variation in Scoville units, but for their distinctive flavors. There is a big difference between a jalapeno, pablano, and habanero. I've found seeded serranos blended in mayo to be my go to for mayo with heat/flavor. Excellent on a BLT stacked on Texas toast for the garlic flavor.
