Yes, pesto essentially means "to pound" so it can pretty much be any ingredients.

I highly recommend pistachio pesto. Basically equal parts pistachio and extra virgin olive oil. A dash of sherry vinegar and salt/pepper to taste.

Sage and walnut makes a good pesto too.  Use extra parsley if your sage is too strong.

Spinach pesto. 3/4 spinach 1/4 basil. So it's like her first one but reverse the spinach/basil quantities.

I hadn't even heard of it until the lockdown. It seems like a good base for other preparations, but on its own it just seems like it lacks something.

Maybe it's popular because of its Italian name.

That said it's definitely become more of a thing lately with the home cooking boom during quarantine. Probably because it's literally a few ingredients.

It's absolutely the instant ramen of pastas. It's cheap, easy, and perfect when you're drunk. And from time to time, instant ramen is the perfect thing. So is Cacio de Pepe.

Neither deserve endless articles extolling their virtues and both deserve occasional listicles telling you what to add to "up your game."

The instant ramen of pastas, what the fark does that even mean?

Yeah, it's simple, but it's also really farking easy to make poorly. You still need to use good quality ingredients and prepare it properly.

It's simple, but quite awesome and not just as some drunken late night snack as you're claiming.
