I have made this for a dinner party and it killed.  Lots of work but it killed.  Fresh noodles, no mutz or ricotta and everyone gets an "end" piece.  I recommend it when you have two days to kill! lol.

PS Del Posto stopped selling this.

No, it looks like it's layered regularly but in a custom pan that will allow for the extra height.  It's served on its side though.

No, it looks like it's layered regularly but in a custom pan that will allow for the extra height.  It's served on its side though.


I wonder if layering the noodles on their side might make for a tasty, more textured dish. I'll have to try that next time.

I would worry more about the pasta falling down and basically making a soup.

That's nothing special. I mean, all lasagne is special. But the resteraunt was cooking it to serve as several portions to several customers. That's normal, most kitchens bulk cook.

I love a good lasagne. The cheese sauce gets licked off first..

Yep, you'd have a mess.  Standing pasta on end and then effectively boiling it in cheese and sauce does not make for anything resembling structural integrity unless you're willing to go to insanely fiddly lengths with skewers/etc.
