i eat a lot of watermelon, room temp will do, refrigerated is preferred. i don't know if i want to try that. i probably would but it certainly isn't an appetizing suggestion.
looks... wrong.

That $75 is for enough smoked watermelon to feed 3 to 5 people. $25 would be worth it to me to give it a try. I'm not a big fan of watermelon in general, but I love pineapple on pizza so this mix of sweet, salty and savory sounds quite intriguing.

I've thrown a slice of watermelon on the grill to see what it would taste like, and I thought it was similar to zucchini. Smoked zucchini sounds ok. I'd try it.

I can't see this as being anything more than a savory dessert. Wouldn't it make more sense to sell it by the slice?

A large watermelon - 20 pounds, on average - will break down into about 60 wedges. I can give 30 people a couple of wedges of fresh watermelon for about $0.40 a pound, in season. Even if I bump that up to $0.50/pound for red-fleshed, seeded watermelon, $25 would buy 2 and a half watermelons, or enough for 75 people to have a good-sized serving.

I'm sorry, but, $75 for 3-5 servings - in other words, $15-25 a serving - is insane.

ewwww, the way it squished and jiggled when that carving knife cut into it....

warm, limp, flaccid watermelon. stained a dark, turgid brown no melon should ever be....

i was actually physically starting to gag. thank god it cut to the cute woman about to taste test this sin against summer, this crime against citrullus lanatus....

and i was able to swallow my gorge, shut the tab, and head back here.

subby, that was awful!

For folks who don't realize just how cheap watermelon really is, farms typically sell large, red-fleshed, seeded watermelon for about $16/hundredweight.

For the price of this one dish, for 3-5 people, you could've bought about 500 pounds of watermelon - enough for 750 people - direct from a farm.

Yep. It becomes disgusting. The water boils, the cells break down, and you're left with a stringy, leaky, smelly mess.

Don't forget the 4 to 5 days of preparation time, the custom-built smoker oven, the high-end restaurant in which this dish would be served with other sides, etc.

It's not an every day thing, it's a special event out (if we ever get back to those types of things...)
