I went to a conveyor belt hot pot restaurant in Fort Lee, NJ in December. It's a great cold weather dish.

I was introduced to hot pot when my company hired a Chinese man for a one year appointment. He moved his wife and young son here and they brought their hot pot; he told me it would have been unthinkable to live without the hot pot for an entire year. Anyway, I was invited to dinner and it was amazing! So many flavors, textures and different foods! It was about a two hour dinner with his family that I will not soon forget. If you have the opportunity to get hot pot, jump on it. If it's home made by a Chinese family, then you're really in for something special!

We've got a few of those places here in the Puget Sound area, too. There are two hot pot restaurants in Crossroads, in Bellevue, and I think one of them does the conveyor belt bit. (I haven't been there in some time, so I'm unsure.)

My town has a coveyor belt hot pot place and we arent exactly known for our exotic restauarants.

/assuming corona closures didnt put them out of business anyway.

It's a sign of them just not caring enough or trying too hard to get those who would not like hot pot to like hot pot thus alienating the base customers needed to keep it aluve
