The tastier variation:

1 2 pound block of Velveeta, cubed
2 10 ounce cans of Ro-Tel diced tomatoes with chiles
8 ounces of Mexican style chorizo, crumbled, cooked and drained
1 8 ounce container of whipped cream cheese, at room temperature

Combine all ingredients in 4 quart slow cooker.  Cook on low for 2 hours, stir and cook 2 more hours.  Makes enough queso for a family of 4 for one week or can be poured over 4 pounds of tortilla chips for one Andre the Giant sized serving.

A family tradition -- cover the entire table w/ aluminium foil. Dump bag after bag of chips and spread them out. Sprinkle liberally with your regular nacho toppings...

In these trying times, dips and other communal dishes are going to become less popular. I think the world is ready for my idea.
Picture queso in little tubes (like trial-sized toothpaste). Each person has their own to apply to their chips.

I'm going to suggest that table nachos are not a great idea at this juncture.

They're not a great idea at any time, but especially now.

1 lb. ground beef
1 box block chili (Famous, Four Star, Ziegler's)
1 lb. Velveeta
1 can Rotel
1 half pint whipping cream

brown and season beef, add block chili and heat thoroughly, cube up Velveeta, add in , stir until melted, add rotel and heat everything until thoroughly hot, remove from heat and stir in whipping cream.

10 oz. asadero cheese
0.75 c. half & half
4.5 oz. diced green chiles, canned & drained -or- 5 oz. green chiles, seeded, roasted under broiler, then diced
0.25 c. jalapenos, seeded & finely chopped
2 ripe tomatoes, seeded & finely diced
0.25 c. cilantro, finely chopped

Melt asadero in medium saucepan under low heat. Gradually stir in half & half until integrated. Stir in remaining ingredients.

The SO & I started making this back in March because Ro-Tel was the only canned good that was still on the shelf in the grocery store at one point, and no one else knows where the Velveeta is (Aisle 13, top shelf, by the crackers).

I've had the best luck with the Queso recipe from The Modernist Cuisine:  wheat beer (or water), pepper jack cheese, and sodium citrate.

You may be delighted to discover Squeeze Cheese, which comes in a variety of flavors & can be microwaved.

2 tblspn butter
1/4 cup diced onion
4 jalepenos seeded and diced
2 garlic cloves minced
2 Anaheim Chile's roasted, peeled, seeded and diced
2 tbl spns corn starch
1 cup whole milk
1 cup water
1 lb white or yellow american cheese Shredded
2 tblspns chopped cilantro
1 teaspoon cumin
1/4 teaspoon cayenne
1/2 teaspoon kosher salt
Guac and pico for musings if you like

In a sauce pan melt the butter. Add the onion and jalepenos and cook till soft (5 mins). Add garlic and Anaheim's and cook for 30 seconds longer.

Whisk corn starch, milk and water until well combined and add to the pan. Bring to a simmer stirring and cook until thickens. Add cheese and turn heat down low. Cool and stir till cheese is melted. Stir in the cilantro, cumin, cayenne, and salt. Taste and adjust seasonings.

When you eat you can add guac and pico as you like.

Yeah, you don't see a lot of bacon used in Tex-Mex cooking.  The smoky aspects in Tex-Mex come from the use of grilled meats.

I used some bacon in my taco meat the other day, it came out really good, I cant remember exactly what I did to it, but the highlights were some canned chipotle peppers sliced up really nice, a can of fire roasted tomatoes, smoked paprika and of course all of the usual suspects (cumin, mostly).  Oh yeah, I just about always throw a can of black beans in my ground beef dishes, too.
