I'd smash that so hard, subbys mom would blush.

Mushrooms pair naturally with cheese... they're both earthy, and earthy flavors compliment each other

I'll have subby's portion.

I don't like mac & cheese if it's been baked and has a crunchy top.  I prefer it to be smooth & creamy like when you do it in a pot.

Also, people who call mushrooms "space food" are just weird.

Quoting from a web page I saved years ago: "A good dish of macaroni and cheese is hard to find these days. The recipes in most cookbooks are not to be trusted. In some instances this is because they refuse to leave well enough alone, vulgarizing the dish with canned cream of celery soup or a dollop of port wine cheese spread. "

Thanks, subby.
Bookmarked and I'm totally making this.
I think I have most of the stuff but need a few items.

Oh I would eat that. Maybe sub the chorizo with bacon since I have bacon on hand. But yeah that sounds good.

Sounds easy enough to make without the mushrooms, and delicious otherwise, so I'll probably try it out. I really can't stand mushrooms though, the taste triggers my gag reflex. I've found some types edible though I don't really enjoy them, but button mushrooms especially are nauseating. They will not stay in my stomach.

All you mushroom haters are an embarrassment to the Shire.  I would eat this for breakfast, lunch and dinner if I wasn't already thirty pounds overweight.

"Add the chorizo to the same skillet and cook, crumbling the meat with a spatula, until the fat has rendered and the chorizo is crispy."

Yeah, as a ground meat product chorizo doesn't exactly get crispy.  It does burn but still stays soft.

Chorizo, and many other ground meat products, can develop a lovely Maillard crust if you cook them in a hot enough skillet. In most cases medium heat is probably a little low for that, though.

fark yes x1000! Except substitute the crimini for a sauteed combo of king trumpet and brown beech. Get fancy with the cheeses. Maybe roast half the garlic. It's a pandemic. Let's get farked up on wine and elevate the food, already.

I... no, that's kind of a hard sell. hard pass.

I love cheese. I adore mushrooms (no not that farking canned soup, you savage.)

but you don't put cheese on something delicate (Narrator: well, until you do.)

I grew out of most of my food dislikes. I was a picky eater as a kid. I didn't like sauce on spaghetti. I would eat the sauce and the noodles, just didn't want them combined. I grew out of that early enough. I didn't like raw tomatoes then either. Number 1 of my dislikes was and still is mushrooms. Love tomatoes now. We are growing some this summer. I have embraced a lot of foods I disliked, but still can't stand almost all mushrooms.

Yeah, I know, how hard is it to just leave out the mushrooms? Come on, subby.
